This is a very delicious and nutritious recipe of carrot rice made from groundnuts, carrots and spices like cinnamon and cloves.

- 1 Heat one tbsp Oil in a shallow pan and add Mustard.
- 2 When they splutter, add Urad Dal and Cashew Nut nuts.
- 3 When the Cashew Nut nuts are brown, add Onion and green Chilieses.
- 4 Fry Till the Onion are golden.
- 5 Add Turmeric Powderr, Salt and Red Chili Powder. Fry for a minute.
- 6 Mix in the Carrot and sprinkle little Water.
- 7 Keep the pan covered, on a low flame, Till the Carrot are done.
- 8 Add bOiled Green Peas.
- 9 Mix in the Rice.
- 10 Add Lemon Juice.
- 11 Garnish with finely cut Coriander Seedss leaves.
